    FYI if you only you use hot peppers you’ll miss some of the fragrance you can get by using mild peppers too. The best chili oil will use a blend of mild medium and hot peppers for a rounded spice and aroma

    I looked it up, 2lbs of dried Thai chilis is around 96g protein. The reapers will push it over a hundred.

    Apparently some people are saying u should have added aromatics. I’m not a noob when it comes to chili oil. I know a lot of people add aromatics to it. I do that the smaller quantities of the oil, but I want the overall batch to be neutral flavored. I don’t want everything.

    I put it on to taste like spices, garlic, and onions.
    Sometimes I put it on desserts. Don’t want my apple pie and ice cream to taste like garlic, onions, and star anise.

    Curious, does op use CR only for the heat or both flavor and heat? I’m a big fan of the reapers flavor and the slower building heat of it.
    If op whant more of a kick in the heat I whod recommend any of the scorpion family of peppers, personally don’t like the “aggressive” heat that hits from start to end.

    How fast are you going through chili oil that you need 2 gallons? That’s a ridiculous quantity, I’d imagine it would go rancid faster than one could safely consume two gallons of oil.

    Peanut oil coagulates in the fridge, just a heads up depending on how you’re storing it. If you keep yours in the fridge veggie oil works better. If you like the nuttiness toasted sesame seeds added towards the end while the oils still hot gives it a good bit Vs peanut oil.
