I was a bit apprehensive because beef cheeks are gnarly looking. But Chuds videos made this a super easy cook. I smoked these for about 3.5 hours at 250°F then put them in a crockpot overnight on low with some added beef tallow. I was very impressed by how great they taste.

Yep, basically the method I started using ages ago, partly based on older videos he did for LeRoy & Lewis. It was good to see him re-do that all back into a single updated video though.
I usually do a pretty large amount in one go, then split up and freeze a bunch of 1-lb vac packs of it.
I followed Chud’s as well and it was amazing!

I followed the same Chuds video, came out great. Started with 10lbs of cheeks trimmed down to 8 and final product ended up at about 4.5lbs total. I smoked for 5 hours with SPG and then overnight in a crock pot submerged in tallow. Drained the fat for an hour or so and vac sealed what I didn’t eat.
