    I’ve posted a Carbonara on here before, so to warn you, it’s fiery. Even to the ratio of Romano vs Reggiano is a deal breaker for a lot.

    From looks, it’s saucy but it looks GOOD. I assume there’s pork in the sauce not just on top, in which case it will rehydrate and it’ll have the benefit of all the rendered fat, so a bit extra crispy on top is all good to me.. if it tastes charred/ bitter then you’ll know you got close and for next time. In my option that’s a lesser sin than rubber pig face!

    I’d 100% eat it and be happy. Just going to get that out of the way. That meat is just overcooked and there’s way too much on there. You want little flavor bombs, not flavor napalm. The sauce is going to be super salty as is.

    Bacon shouldn’t be brown like that, but maybe its your camera.

  8. That looks like a terrible Ragu, dry, no tomato paste, and than mince is brunt

    Aside from the guanciale looking odd, this looks like a delicious meal.

    And the guanciale might be fine. But it looks like the pieces were cooked siper hot or even deep fried to me.

    It looks delicious, but I didn’t notice the name of the sub and I thought it was an omelet at first.
