This Parmesan cheese costs $25 a pound. That’s expensive and you’re also paying $25 a pound for the rind. Most people just throw that part out, but I can show you another really good use for it. All you have to do is cut off the rind, give the rind a little scrape. Now, we’re going to cut it into some small pieces, just like these. Then, place them on a microwavable plate and microwave them for 90 seconds. And just like that, you’ll have some Parmesan puffs.

  3. another great use for the rind is to throw it into a ragu whilst you simmer it, leaves a really nice umami, creamy taste

  4. My Italian mom makes minestrone (soup) and puts the rind in there, as the soup boils it softens and adds flavour and you can even eat it same thing for pastina (the small pasta with the water idk the word)
