A staggering 3.200 wines at the tasting tables, 800 wineries representing the most exciting wine regions in Italy, and over 60 chefs and master pizza makers from Rome and throughout Italy will be the protagonists of Vinòforum 2025, the major food and wine event taking place in Rome from Monday, September 8th to Sunday, September 14th, in Piazza di Siena, in the heart of Villa Borghese. Hundreds of events will lead the public on a discovery of Italy’s finest products and top talent. Seven evenings of exquisite tastings, top-notch food and wine experiences, as well as educational opportunities with introductory courses on wine and extra virgin olive oil, as well as business-oriented spaces and meetings on the digital world.

For this edition, Vinòforum has scheduled a unique calendar of events, ranging from exclusive dinners with top chefs to meetings with leading names in wine, and menus entirely dedicated to the gastronomic traditions of Rome and Lazio in its Temporary Restaurants. It all kicks off on Monday the 8th with Flavio Pulicati of N’Antro Bistrot and L’Oste della Bon’Ora (Rome), the heart and soul of authentic Roman cuisine; Giuseppe Milana of Giù Upside Down Restaurant (Rome), the perfect blend of tradition, a passion for the Orient, and the chef’s Sicilian roots; and Alessandro Bizzotti of JappoRomano (Rome), a prime example of how Roman and Japanese culture can seamlessly intertwine. Tuesday the 9th continues with Riccardo Ulsi of La Bottega Frascatana (Frascati) with his sincere and deeply rooted cuisine, Ciro Alberto Cucciniello of Carter Oblio (Rome) with his excellent raw materials, and Franklin Garcia of Garden Ristò (Rome), who combines Ecuadorian origins with sustainable cuisine made with local ingredients. Wednesday the 10th will feature Enrico Braghese of Zi’ Rico (Palestrina) with his menu celebrating local flavors, Otello Evangelista of Casa Maggiolina (Rome) with his great traditional classics, and Pietro Adragna of Anni e Bicchieri (Rome), who offers Roman ingredients revisited with an original twist. The protagonists on Thursday the 11th will be: Daniele Mochi of Cantina Simonetti (Frascati), a great example of true Castelli Romani tradition, and Paolo D’Ercole of Scima (Rome), with his journey through the most iconic dishes from various Italian regions. Rounding out the trio are Marco Di Venere and Federico Compagnucci, two friends and colleagues from the Mafè Osteria Moderna restaurant (Rome), who offer creative cuisine with modern influences. 

Friday the 12th will feature Jacopo Caira of Felice in Testaccio (Rome), a true institution of authentic Roman cuisine; Gianluca Marrella of Osteria Da Francesco (Rome), a go-to for those seeking expertly prepared traditional dishes for over 60 years; and Pietro De Luca of Agriturismo La Collina (Monte Compatri), an oasis for lovers of excellent products and authentic flavors. Kicking off the weekend on Saturday the 13th will be Alessandra Verdile, Federico Pitti, and Andrea Verdile of Osteria Della Vittoria, a new opening in Prati with home-cooked flavors and a welcoming atmosphere; Daniele Maragnani of Bon’s (Rome) and his menu blending tradition and modernity; and Anthony Morosillo of Caligola Osteria Sincera (Rome) and his reinterpretations of classic dishes. Closing out the Temporary Restaurant program on Sunday the 14th are Marcello Acquarelli and Aldo Serra – Hostaria 100 Celle (Rome), a point of reference for tradition in one of the capital’s most distinctive neighborhoods; Emanuele Mastroianni of Tacito (Rome) and his fusion of Roman cuisine and Calabrian influences; and, finally, Federico Salvucci of Fase Cucina Spontanea (Rome) with his innovative, environmentally conscious cuisine rooted in its local area.

Vinòforum 2025 holds a special place for the world of pizza, with the signature Pizza d’Autore dinners by Molino Casillo, which this year will also include a bakery section. From Monday, September 8th to Saturday, September 13th, masters of the art—pizza makers and bakers—from across Italy will present unique menus designed and crafted by them. “Our presence at Vinòforum 2025 confirms Molino Casillo’s philosophy of being a true partner to artisans, supporting them in showcasing their art and talent.”

Opening on Monday 8th will be Leonardo Lanza of Sfizio (Rome) and Francesco Arena of Arena Mastrofornaio (Messina), followed on Tuesday 9th by Gabriele Paradiso of Santini Bistrot (Rome) and Marco Lattanzi of Il Toscano Panificio (Corato). On Wednesday the 10th, Ciro Salvo of 50 Kalò (Naples – Rome) and Alessandro Albanesi of Panificio Albanesi (Rome) will take the stage, while Claudio Abate of Abate Pizzeria Gastronomica (Castel di Sangro), Pasquale Moro (Technician Molino Casillo), and Mauro Mari of Panificio Mari (Montefiascone) will be the stars of the evening on Thursday the 11th. On Friday the 12th, Gianluigi Di Vincenzo of Giangi Pizzeria (Chieti), Antonio Tancredi of Diametro 3.0 (Casoria), and Melania Guarnieri of Panificio Grammo (Palermo) will take the stage, while on Saturday, Pier Daniele Seu of Seu Pizza Illuminati e Tac (Rome) and Alessandro Lo Stocco will take to the stage. All the pizza chefs’ creations will be paired with the famous Leffe Abbey Beer in its Rouge, Blonde, Ritual, Triple, and Ambree varieties, on tap and in bottles.

One of the major new features of this 2025 edition is the tasting calendar entirely dedicated to Spanish wines. Like Italy, Spain boasts a rich and diverse winemaking heritage, with 96 designations of origin and some of the world’s most renowned wine regions. The program, developed by the Spanish Tourist Board, including Turismo de Aragón and Turismo de la Rioja, will feature a series of guided tastings, starting at 19.30:XNUMX pm and continuing into the evening, showcasing the most important Spanish wine labels, introduced by a presentation on the “Rutas del Vino de España” (Spanish Wine Routes).
