Meal prep experiment for this week: meatball orzo with tomato, onion and parmesan.

⏱ Prep time: ~30 minutes

πŸ’Ά Cost per meal: ~€4

🍱 Portions: 4

I wasn’t sure if orzo would keep well for a few days, but it actually holds up nicely.

πŸ‘‰ Question for the pros: do you usually add the cheese right away when meal prepping, or only before eating?Looks like a proper prep! Enjoy

That looks really good. I always put parmesan on right away. Then, when I reheat it… I add more parmesan 😏

That sounds amazing, nothing beats the joy of a meal turning out even better than you imagined

Looks delicious. I let it cool down after cooking, and then add the cheese before popping in the fridge.

That looks delicious and I’d love the recipe if you’re willing to share!

    Edit: spelling

I like to add parmesan after I heat it and give the food a mix. Otherwise, the cheese likes to glue itself onto my glass containers πŸ˜‚

  7. Looks like something I want to make- would you mind sending me the recipe as well?

    Please post your recipe!

We recently added a rule (#6) requiring either a recipe or list of ingredients, since it is so often requested. If you wouldn’t mind adding that we’d appreciate it!

Posting so I can come back when the recipe is added. This is a cool accomplishment but worthless to us without one.Β

    Ingredients:

    800 g ground meat β†’ rolled into meatballs (~200 g per portion)

    1 large onion, chopped

    300 g cherry tomatoes, halved

    400 g orzo

    500 ml chicken broth

    1 can (400 g) diced tomatoes

    1 tsp dried oregano

    Butter (for frying)

    Parmesan cheese (for serving)

    Instructions:

    1. Roll the meat into meatballs.

    2. In a big pot, melt a knob of butter and sautΓ© the chopped onion until golden.

    3. Add the cherry tomatoes and let them soften for a few minutes.

    4. Stir in the orzo, then pour over the chicken broth, canned tomatoes, and oregano. This liquid is enough to cook the orzo (about 12 min total).

    5. Meanwhile, pan-fry the meatballs in butter until nicely browned and cooked through.

    6. When the orzo has about 3 min left, add the meatballs into the pot so they stay warm and pick up some flavor.

    7. Portion into bowls or containers, then finish with grated Parmesan before serving.
