




Hi All! Continuing to document my freezer cooking for my Dad. I started my pulled pork yesterday. I turned it off after 10 hours. I let it sit over night and shredded it this morning. I used a 4 pound/1.8kg pork loin. I ended up with 8 portions for Dad.

I've done this recipe multiple ways. One, as a dump/crockpot meal (great for new parents, or if a family members is ill. Defrost overnight in the fridge and put in the crockpot). Secondly, I've made it to eat now. Third, I make it as if to eat now, but instead I cool it, then portion it for the freezer.
I said in a reply comment that I wasn't going to have to make meatloaf. Well, colour me surprised! Dad was all "What do you mean, no meatloaf." So, guess who made meatloaf? Picture 3 shows 2 pounds/907g of ground pork AND 2 pounds of mixed/flavored sausage meat. Mixed normally, then I used the individual portion tray (Picture 4 – but I've used cupcake trays as well) to bake 18 portions. Then 2 pounds of ground beef.
So, I'm thinking I had a productive day. Hoping you all have a great time today!
