Jambalaya is perfect. It's filling and low cal. It's flavorful and spicy. It packs a ton of protein and veggies. Rice goes a long way. It freezes and reheats well (add plenty water and microwave low). Despite 5 pounds of meat, this comes out to 27 kcal an ounce. (This yielded like 16 lbs lol)

In large pot, sear sausage on high to get browning. Don't worry about sticking, set aside and leave any rendered fat for shrimp next. Season and bake chicken until slightly under done (140ish). Add up to a Tbs of Cajun seasoning to shrimp and half the garlic. Fry shrimp and garlic on high and then immediately add water and deglaze. Set aside shrimp. Sauté all veggies at high temperature. Add the rest of seasonings and garlic. Add tomato, stock, rice. Let come to boil and simmer for 25-35 minutes. Add meat in and let come to temp.
