Italian stuffed peppers. This recipe doesn’t have any rice, so if you’re on a keto diet or you just don’t like rice, then this one is for you. I cut my peppers in half lengthwise just because that’s the better portion size for us. But if you want to use the whole pepper, by all means, go ahead. I just season all the peppers with olive oil and all the seasonings on both sides. And I par bake those in the oven on 375 for 10 minutes while I’m getting the filling together. And the filling is just a pound of hamburger, half a chopped onion, some garlic, and all the seasonings. Get that browned and incorporated well. And then I add a can of diced tomatoes. And I add some of my homemade pizza sauce. You can also use marinara. Just do not add a lot because you do not want this filling to be too thin. You want a good thick filling. Then add all your cheeses. Ricotta, cream cheese, some Parmesan cheese. And then once that all gets melted and incorporated together, I add the fresh basil at the very end. And then you’re going to stuff your peppers. And after you get them all stuffed, you’re going to top it with some fresh mozzarella cheese. Bake in the oven on 375 for 25
