Southern Potato Salad – A Recipe Worth Celebrating

Potato Salad

Ingredients:

4-5 medium size potatoes
1 cup of miracle whip
1 1/2 tbs yellow mustard
3 boiled eggs, roughly chopped
1 1/2 tsp kosher salt
1 tsp onion powder
1/2 tsp white pepper
1/4 cup sweet or dill relish

Directions:

In a medium sized pot of boiling water enough to cover eggs completely, add 1 tsp of salt then add eggs boil for 30-45 minutes. Wash and cut potatoes into cubes. In a larger pot of boiling water add salt , pepper then add potatoes cook for 10-15 minutes until potatoes are fork tender. Drain and place in the refrigerator until cooled. Once eggs are done rinse with cold water and peel then roughly chop eggs. Once potatoes are cooled in a large mixing bowl, add all ingredients mix together well and taste for likeness make any adjustments if needed, plate and enjoy..
