•Yeast: ~2 g (McDougalls Fast Action dried yeast)
Left the dough covered on the countertop at ~22 °C (room temperature in Ireland).
Allowed to rise overnight (around 8–10 hours).

The crumb looks good so the dough was made well but the shaping could use a bit of work otherwise as long as it tasted good I’d count this as a sucess especially for a first time

I think you did great, if you add some sugar it will make the yeast react and create more co2 which will make it fluffier. Also a little fat goes a long way, and you can use oil, shortening, butter, yak milk..you get the idea. How did it taste? Did it need anything? Less salt? More?
