This buffalo chicken salad is the lunch I’ll be having on repeat. It’s got a creamy dressing that’s so good. You can add it to wraps or even serve it with chips as a game day appetizer.
Buffalo Chicken Salad 🏈 a quick & easy 10 minute recipe you can have for a high protein lunch or serve it for game day with chips or veggies! As a dietitian who used to be a server at Buffalo Wild Wings, this one is dear to my heart. 🫶🏼I hope y’all enjoy it!
~Ingredients~ • 4 cups shredded chicken • 2 stalks celery, finely chopped (about ½ cup) • 4 stalks green onion, finely chopped • 1 cup plain Greek yogurt • ⅓ cup Buffalo sauce, I use @Primal Kitchen Foods brand • ½ large lemon, juiced • 1 tsp garlic powder • ½ tsp paprika • ¼ tsp salt, more to taste • ¼ tsp black pepper
~Directions~ 1. Shred your chicken using either 2 forks or a hand mixer. Chop the celery and green onions. 2. In a large bowl, combine the shredded chicken, Greek yogurt, and buffalo hot sauce. Give it a good stir. Add the celery, green onions, lemon juice, seasonings, and salt and pepper and stir to combine. 3. Hint: if you like things spicy, add more buffalo sauce and cut back on the amount of Greek yogurt!
Dietitian Tip 👉🏼 It seems basic, but it’s easy to forget that when it comes to sticking with healthy eating, having easy recipes prepped and ready to go is so helpful! We replace mayo often found in chicken salad with Greek yogurt which adds more protein and some calcium and phosphorus for strong bones. 🦴
