I go hunting in South Ga a few times a year and wanted a smoker that would fit whole pigs. Built this offset out of an air compressor and it turned out great. The firebox is insulated with ceramic fiberglass so she just hums along and uses way less wood than you would expect.

I did my first whole pig a couple weeks back. Brined it for 3 days in curing salt Prague powder #1. Put it on at 6am at 250 degrees and sprayed it with pineapple juice and brown sugar mixed every hour or so. I smoked it to where the thick parts of the animal temp checked at 195-205 (I wanted it thoroughly cooked because it's a wild animal). It was done right at 8pm.

It turned out fantastic and the whole party enjoyed it. Next time I will try just spraying it with oil as I've heard it'll come out less black and more golden colored.

PS- that sledgehammer head was lying the shop so we used it as a counterweight for the door

    Out of curiosity, how is the layout under the grates considering the smoke stack is on the same side as the fire box? Is the heat/smoke forced to travel the length of the pit under the grate then come out the opposite side of the fire box only to then travel the length of the pit back to the stack?
