Lunches for the short week! White bean and chorizo “ragu,” on rice

Recipe is from Leanne Brown’s *Good and Cheap*. Super easy! Less than 30 min start to finish.
* Chop then saute 2 onions in a large pot * Mince 4-6 cloves garlic (and, if you want, 1-2 jalapenos) then stir into the pot * Add 1 lb (450 g) ground chorizo (Mexican chorizo – more like regular ground sausage, not the Spanish chorizo that’s more of a cured meat) * Break up the meat and brown it in the pan, * After the meat is cooked, add two 15 oz cans of crushed or diced tomatoes, two 15 oz cans of white beans (drain the beans first) * Stir it all together and add salt and pepper to taste. * Cook for 5-10 min on medium-high heat until it’s the consistency you want. If it’s not liquid enough, add a little water

Great job! I love do meal prep) I’m obsessed with my kitchen scissors for meal prep (buy on amazon, realy like it and recommend). I grab them every morning-snip cucumbers, peppers, and herbs straight into a bowl, no cutting board to wash. I portion salads into the kids’ lunchboxes in about 30 seconds, trim chicken right on the sheet pan, even slice tortillas and green onions in mid-air. It’s ridiculously convenient, saves me time and dishes, and honestly made my weekday cooking feel lighter and less chaotic.
