3.5lb Picanha $42 cut into steaks, then dry brined the ones pictured for a little over 24hrs. Remaining steaks were vacuum sealed/frozen.
These were reverse seared at 250f for maybe 30 minutes give or take. Pulled and seared on stainless steel.
Extremely rich and very beefy. Not my favorite cut but I would happily eat it again and at that price it is hard to complain.

great cook job! curious, how’d you season them?
i’ve found that the best way to season picanhas is, interestingly, salt only! it’s how it’s traditionally done in Brazil, and for good reason IMO. i’ve noticed other seasonings, even pepper, take away from the flavor for some reason
I’m sorry this doesn’t have more likes. This looks insane
now that’s the dinner i wanna have
Nice cook! Picaña is the one steak that looks gross raw and delicious cooked

Thought it was a piece of watermelon at first.
Looks like perfection. I’ve got a frozen picanha in the freezer right now. I’ll use your method.

That sear tho 🥵🔥
Just cooked one for the first time myself the other day. Smoked at 225 for 3 1/2 hrs then grilled each side from about 5 minutes at 475 ish. Delicious.
Outstanding!!
Looks like a good cut of meat, only salt
Never realized how hideous a raw picanha is before. Only ate them every other day when I went to Brasil.
The end result is fabulous! Sorry, exaggeration, it looks great. 😁
