This is food that everyone should know how to cook. Spicy shrimp scampy that’s not bland, not dry, and actually tastes like real shrimp. Oh wow. It’s like shrimp scampy on steroids. And to make it, I like to use easy peel shrimp cuz let’s be honest, nobody wants to spend 10 minutes peeling and devaining shrimp. Hang on to these shells. We’re going to use them. But first, you need to cook the shrimp. You can keep the seasoning simple here because the real flavor building starts in the next step. So, in the same pot that you seared the shrimp, you want to make this sort of shrimp flavored broth. I’ve had shrimp scampy quite a few times and it’s always been kind of boring to me. And I know it’s a few extra steps, yes, but it transforms the dish from a Tuesday night dinner to something you’d make when you’re trying to impress someone. Trust me, it’s worth every extra minute to make. And you really only need to let this broth simmer for like 20 minutes. This smells so good. Now, you can stop right here and strain it, or you can blend it up. Remove the chili. It’s optional, but it’ll make your broth way more intense. And once you strain it, you’re left with this liquid gold. Woah. I just want to drink this. It really is that good. And it’s important because it’s the base of your sauce. Just boil the linguini for 5 minutes, then finish it in the broth with some pasta water. I like to chop up half the shrimp and add that in here. This is where you kill the heat and finish the sauce with plenty of cold butter, parsley, and lemon juice. If you want the detailed recipe, it’s up on my site linked in my bio.
