It is the end of, a very long, week and, definitely, need to meal plan and shop for next week. Not a lot of choices this morming. I used the last 2 eggs, scooped and scraped the last bit of cottage cheese, and rescued a wrinkled half of a baked potato; leftover from dinner earlier in the week.
Full meal ~ 405 calories

2 Large scrambled eggs with 25 grams part-skim ricotta cheese ~ 200 calories
5 ounces fried potatoes ~ 170 calories
1 large mug pomegranate green tea ~0 calories
Not shown: 4 ounces of fresh watermelon ~ 35 calories

How’d you fry the potato? Any fat/oil to make it crisp up? Pan or air fryer? I haven’t been happy with my experiments so far.
