    For next time, spend more time searing on that fatty part. You can really render it down and it’ll make the fat less chewy.

    Correct me if I’m wrong, but isn’t there supposed to be an initial rendering of the fat strip prior to searing the sides? I’ve heard you render that fat off and then basically cooked the rest of the steak in that fat, but it looks like you left it on completely. I have no idea.

    I can’t agree with the comments more – well done. If you wanted an area to focus on it would be the fat cap but I don’t see any complaints. Nice job.
