Lagana is a sesame-topped flatbread baked across Greece on Clean Monday (Kathara Deftera)

It’s the first day of Great Lent in the Orthodox calendar.

The word “Clean” refers to spiritual and physical cleansing. Families gather outdoors for picnics with plant-based fasting foods, olives, taramasalata, pickled vegetables, and always fresh Lagana bread.

Kite flying is also part of the tradition, symbolizing renewal and freedom!

In this short, I bake a small-batch Lagana brushed with a cornstarch glaze for a shiny, crisp finish

Recipe:
250 g strong white flour
150 ml warm water
3.5 g yeast
¾ tsp salt
½ tsp sugar
1 tbsp olive oil
Sesame seeds + cornstarch glaze

Bake at 200 °C for 20–22 minutes.

Best eaten the same day, leftover slices make great rustic crackers.
