    You made onion jam, which is also great, but i see you def added sugar, which can go bitter if you let if go too long. Onions and oil is all you need.

    Took it a bit too far, IMO. You can make them “quick” (like 30-40 mins) by starting with a small amount of water with a lid on. The steaming softens them fast. Uncover and proceed as normal until about halfway and you can add a small pinch of baking soda. This increases the Ph, which speeds up the browning.
