crispy chicken caesar just hits Dressing: – 1 lemon, juice and zest – 2 tosp tahini – 1/4 cup grated parm – 1 clove garlic minced – 1 tosp Dijon mustard – 3 tosp olive oil – 1/2 tsp salt – Freshly cracked black pepper Mix all ingredients together (use immersion blender for smoother considency). Add water if needed. Crispy Chicken: – 1 chicken breast butterflied – 1 egg – Flour for coating – Crackers (i use simple mills cracked black pepper crackers) or regular breadcrumbs – S+P Salad: – Romaine lettuce – Bacon – Tomatoes – Parmesan – Crispy chicken Cut your romaine and tomatoes to desired size. Set aside. At this point, prep your breadcrumbs if making from scratch using crackers. Heat a skillet over medium heat and cook your bacon, remove when done. While the bacon is cooking, butterfly your chicken breast into two thin halves and season w salt and pepper. Coat chicken in the flour then egg then press down in the breadcrumbs. Add 1/4 in oil to the skillet and bring to medium heat. Cook the chicken for 5 min on each side. Assemble the salad. I could seriously eat this crispy chicken Caesar salad every day. Start by washing and chopping romaine and cutting up some cherry tomatoes. And then I butterfly my chicken breast so they’re extra thin and then coat them in crushed black pepper crackers to make them super crunchy and add an amazing flavor. I add some bacon, of course, for the saltiness. And then I like a lighter lemony Caesar, so this is my spin on the traditional dressing. I love the flavors making it this way. Finally, make sure the lettuce is really well coated before adding the rest of the toppings. So good. Enjoy.
