Vegan Chocolate Self-Saucing Pudding – (Serves 4 to 6)
Ingredients:
Pudding:
1 cup (125g) self raising flour
3/4 cup (150g) sugar
2 tbsp (25g) cocoa
1/2 tsp baking soda (2g) OR 1 tsp (5g) baking powder
1/2 tsp (2g) salt
1/2 cup (125ml) plant milk
1/3 cup (80ml) vegan butter, melted
Sauce:
3/4 cup (150g) brown sugar
1 tbsp (12g) cocoa
2 cups (500ml) hot/boiling water
Method
1. Preheat the oven to 180C / 350F.
2. Add flour, sugar, cocoa, baking soda or powder, and salt into a bowl. Store to combine.
3. Pour in the plant milk and vegan butter, mix to form a smooth batter.
4. Pour mixture into a greased baking dish.
Sauce:
5. Mix the brown sugar and cocoa together and sprinkle evenly over the top of the pudding,
6. Carefully pour the hot water onto the back of a spoon over the top of the pudding.
7. Bake for 40-50 minutes, stand for 5 mins to allow the sauce to thicken.
8. Serve warm with vegan ice cream.
