Bought two bunches of beetroot with the green attached. Thought I better use them.
This is the most delicious ‘spinach’ and cheese pie I’ve ever made. Sweet and earthy.
Recipe:

Beet greens- 2 bunches. shredded and nuked till soft. Squeeze out water. I weighed them after- 600g

Onion- 1 large. Dice and nuke for 2 mins

Cottage cheese- 500g

Low fat feta- 200g

Eggs- 16

Garlic- one bulb. Raw minced.

Fresh mint- handful, chopped

Salt- heaped tbsp

Pepper – unholy amount

Nooch- 1/2 cup

Mix all ingredients and pour into appropriate baking dish lined with paper.

I cut it into 8- each slice is just over 300csls with 30g protein. WIN
