Today we’re making a high-protein Moroccan Apricot Chicken Salad that’s flavorful, soft-textured, and nutrient-packed.
📝 Ingredients:
2 chicken breasts
¼ cup no-sugar-added apricot spread
¼ cup shallot
½ cup cilantro
½ cup olives
Zest and juice of ½ lemon
8 oz Greek yogurt
2 tsp Moroccan seasoning (or blend of cumin, cinnamon, paprika, ginger, garlic, turmeric, coriander)
👨‍🍳 Steps:
Dice chicken, mix with yogurt + spices
Cook thoroughly and pulse to shred
Pulse shallot, cilantro, olives
Combine all ingredients in a bowl and mix

Hey guys, Dr. Bar here, a buriatric surgeon in Dallas, Texas. And today I’m going to show you my recipe for a high protein Moroccan apricot chicken salad that you can eat when you’re in the soft food stage after buriatric surgery. You’ll need two chicken breasts, 1/4 cup of no sugar added apricot spread, 1/4 cup of shallot, half a cup of cilantro, half a cup of olives, the zest and juice of half of a lemon, 8 oz of Greek yogurt, and 2 tbsps of Moroccan seasoning. You can buy a pre-made one or you can make your own by mixing a/4 teaspoon each of cumin, cinnamon, paprika, ginger, turmeric, garlic, and coriander. First, dice the chicken breast for quicker cooking. In a bowl, add in the chicken, yogurt, and spices. Mix this until coated. In a pan over medium heat, cook the chicken until no longer pink at the center. Now, run the chicken through the pulse of a food processor until finally shredded. Set that aside. Next, in the food processor, add in the cilantro, shallot, and olives. Run this until finally chopped. Finally, in a bowl, add the chicken, apricot spread, olive mix, Greek yogurt, lemon zest, and juice. Mix this until well combined.
