Lobster tail is attached at the base of the tail. Butterflying is so common its all I’ve seen at restaurants and the only way I’ve prepared them. Costco always has Lobster tail and its hella easy to prepare.

There’s a connecting tendon from the meat to the tail. It’s left connected during cooking so the meat won’t fall off of the empty shell.

You didnt see it? Ruth Chris restaurant puts the lobster meat on the top of the shell while still connected to the tail. He cut the connection of the meat as it’s still connected to the tail as part of the presentation as usually the are served as they only cut them in the middle.
