    Correct me if I’m wrong but isn’t that just a glorified proofer for subways frozen mystery dough? Have you tried to use it for normal baking?

  6. My area was inundated with them a few years ago because every franchise has to upgrade. Most of the store owners weren’t happy about it.

    There are multiple versions depending on when they were purchased and the size of the store. The smallest ran on multiple 110v plugs (required different breakers). Some of the nicer ones could do steam injection via a water line hookup.

    My wife said no.

    That looks like opportunity for a lot of fun meals.

  9. Check the door seals on that thang, they’re always the first thing to go and it looks like it’s seen some use.

    If you’re getting big hotspots and cold spots, that’s probably what’s up.

    Top temp on the oven seems to be 425°F (218°C). That’s going to limit its usefulness for some breads. 
    I wonder if it can be hacked to go higher? No doubt others have done so.

    The Subway I worked for like, 8 years ago, used a newer model, so I can see why they would be getting rid of it. But, I’ve always wanted one for myself how lucky.
