Quick question from a beginning macaron baker: How many grams would you think that 6.5 egg whites is supposed to be? 200g?

I’ve seen others say you need to be very exact with macaron ingredients, but the grams weight is not listed.

    Check the beginning of the book and it will usually tell you the size of egg that you should be using. However, this is a European book so I’m not sure how their egg sizes differ from the U.S. I’m going to generalize here, but most people in the US are using a large egg in their recipes if you find them online

    It’s unusual to me that they measure everything else in grams but not the egg whites. I use a bit less than three eggs’ worth of whites to get 100g in the recipe I use. If that holds for your eggs, 6.5 eggs would be about 215g
