The last week was filled with Mexican-ish dinner, and tonight was repurposing the random ends I had left in the fridge. Surprisingly greater than the sum of its parts.

  • Leftover carne asada > fajitas?

  • Leftover frijoles de la olla > refritos

  • Leftover tortillas > 1 airfried into a crispy shell (bean n cheese), another for taco-ing.

  • Leftover salsas and condiments (creamy rojo, escabeche, pickled onion)
