Favourite shoyu ramen in Tokyo? Not sure I can choose, noodles here are top and the broth is super chicken forward but has something special (might be the duck)

    Does anyone have a clue how they make that broth? Is it certain French techniques? I like to think of these shoyu ramen as the new wave shoyu ramen. Its like more technique or something where the broth is more elegant than the humble and comforting oldschool Tokyo shoyu.
