Recipe if any of you want it: Olive oil, Spicy chorizo, Onion and garlic, Peeled tomatoes (whole), Any pasta.
Saute garlic and onion in a bit of olive oil, Fry chorizo, Add the tomatoes and let simmer, Season with basil, black pepper, salt, chilli flakes Add sugar for balance. Optional: a bay leaf and paprika for some kick

For a better result i would gut the chorizo from 5he casing and bake it or fry it for better caramelization and adherence to the noodles, but I’m a fan of chorizo pasta

Chorizo needs to be cooked thoroughly. If ya take your time and cook it properly, then I’d give it a go, but it is one of those particular foods I personally don’t want half assed.

Bloody love it. We dice the chorizo and add pork mince to make the dish stretch further for our big family.
