Plating for 12,000 (yes, that’s not a typo, twelve THOUSAND) guest tomorrow in two sitting of 6000. Then tomorrow morning we get to do it all over again for thursday’s sittings.

    This looks like plating heaven to me. Yes please! Idk but there’s just something so pleasing about the assembly line plating process.

    Maybe it’s the singular focus repetition watching something build vs having at least a half dozen things going on a once while the expo is about to lose their shit on the next waitstaff member who asks for something on the fly.

  13. Most standard stainless tables have a max weight limit of 600 lbs.

    Most ceramic or porcelain plates of a similar size weigh 1-2 lbs

    Quick guesstimate of the number plates sitting on this table is ~4500

    This is so very close to a catastrophic failure in the range of $20k if literally all that happens is a broken table and plates. Add loss of revenue if food can’t go out, and injuries from employees standing near 4500lbs of falling plates, $100s of thousands easy, with this post as very simple evidence.
