Salmon-Wrapped Shrimp with Walnut Pesto Alfredo

Ingredients (Serves 4 as appetizer, 2 as entrée)
• 1 (8 oz) salmon fillet, thinly sliced
• 12 jumbo shrimp, peeled & deveined
• 1 Tbsp CMX Complete Seasoning
• 1 tsp CMX Garlic Sage Seasoning

Walnut Pesto
• 2 cups fresh basil leaves
• 2 garlic cloves
• ½ cup walnuts
• ½ cup olive oil
• 2 Tbsp lemon juice
• 1 tsp CMX Garlic Sage Seasoning
• Salt & pepper to taste

Walnut Pesto Alfredo
• 1 cup heavy cream
• 1 cup grated parmesan cheese
• 2 Tbsp butter
• 1 tsp garlic paste
• 1 tsp fresh thyme
• 2 cups baby spinach
• ¼ cup walnut pesto
• ½ cup reserved pasta water (add gradually)
• Salt & pepper to taste

Directions
1️⃣ Marinate shrimp in walnut pesto + CMX seasonings.
2️⃣ Wrap each shrimp with thin salmon slices. Freeze 15 min.
3️⃣ Cook until salmon is golden & shrimp opaque.
4️⃣ For Alfredo: simmer cream, butter, garlic & thyme. Stir in parmesan, spinach & walnut pesto. Slowly add pasta water until creamy. Season to taste.
5️⃣ Toss with linguine, fettuccine, or tagliatelle. Plate shrimp on top & drizzle extra pesto.
