    I think it’s wahoo(ono). The fillets of the fish are long with a central bloodline that gets cleaned out. That look like sliced from the top loin of the fish. The raw fish has a glossy off white almost pink color but turn white when cooked. Escolar, or white tuna, has pretty white meat raw and cooked. The inside of the slices resembles more of ono raw.

    Caught an Ono on the Big Island and made ceviche with it. It was delicious.
