I've been baking macarons for about 3 months now and I just got some new teflon mats, and since i've been using them, all my macarons only have feet on 2 sides. I am not sure how or why this happens, but I think it is because the teflon mats are too nonstick? I've used teflon before and they turn out perfect, but when I use these mats they are not exactly lopsided. Just wondering if its because of the teflon mats. Just to add, right after I take them out of the oven and transfer them to a table to dry, all the macs just slide off their spot.

  1. it might be because you’re moving them right after they come out of the oven. i just set mine on the stove top and once they’re a bit cooler i move the mat off the tray onto the counter. also, i flip my baking sheets upside down and put my mats on the bottom. this helps the airflow over the macs be uninterrupted so they rise evenly

    My guess is uneven heat, & the mats act as an insulator that make the issue more pronounced. Maybe try rotating the trays at the halfway mark?

    I’ve never used teflon but how long are you resting before baking? I wonder if you could experiment with no rest vs different resting lengths? I know if I rest mine too long they get uneven like this
