



400g flour containing 10g protein
1.6g salt
Starter 80g
Water 70%hydration
Mixed all ingredients, waited 30mins.
30mins stretch and fold x2, 30 mins coil fold x2, rest 4hrs.
Laminate, preshape, rest uncovered 30mins, shape then rest in loaf pan for 1hr. Cold proofed for 14hrs.
Preheated oven for 15mins then scored the bread. Baked at 240°C covered for 30mins, 200°C uncovered for 20mins.
..this looks good to me. But what do more experienced people think?
