Ingredients:

For the Chili:

  • 500g ground beef (or turkey)
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 green bell pepper, diced (optional)
  • 400g canned diced tomatoes
  • 300g canned kidney beans, drained and rinsed
  • 300g canned black beans, drained and rinsed
  • 2 tbsp tomato paste
  • 250ml beef broth
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • Salt and black pepper, to taste

For the Macaroni:

  • 250g elbow macaroni
  • Salt, for pasta water

For Topping & Serving:

  • 100g shredded cheddar cheese
  • 2 green onions, sliced
  • Cornbread (store-bought or homemade)

Instructions:

  1. Make the Chili In a large pot over medium heat, cook ground beef until browned. Drain excess fat. Add onion, garlic, and bell pepper; sauté until softened. Stir in diced tomatoes, beans, tomato paste, beef broth, chili powder, cumin, paprika, salt, and pepper. Simmer for 20–25 minutes, stirring occasionally.
  2. Cook the Macaroni While the chili simmers, bring a pot of salted water to a boil. Cook macaroni according to package instructions until al dente. Drain.
  3. Combine and ServeI n a large bowl, combine the chili and macaroni. Top with shredded cheese and sliced green onions. Serve hot with a side of cornbread.
