Made this awhile ago and finally got the courage to post.
Decent pull and texture. Almost overwhelming nutty flavor with a strong funk that adds to the savoriness.
Ratio/Ingredients: ~1.5oz white cheddar, ~1oz gruyere and challerhocker. Unsalted butter on farmer's loaf.
If I had to make another one, I'd add slightly less cheddar, and swap out either gruyere/challerhocker for a young gouda at a higher ratio. It was honestly a little bit of a challenge to finish eating because of the heaviness, but still enjoyed it. 7/10

Very pretty, I will keep my heretical thoughts quiet.
You’re not wrong about the young cheeses making for an easier experience, but sometimes one craves the old cheese LORE
Looks great.
