I posted my first loaf here a few days ago and now I tried the same recipe again (I will put the link in the comments!) with all the feedback I got and the additional research I did to that. I think it looks even better than the last time! I was more gentle on the s&f and when shaping and I think I also properly fermented the dough this time. Was jiggly, not sticky. I noticed that it grew more in size after the cold proof overnight (this time around 14h instead of 10h) The last loaf was edible for sure but I didnโ€™t really like it. The consistency was just a bit off. This one tastes great! I was still a bit too impatient when the bread was cooling ofโ€ฆIt was slightlyyy warm when I cut it. Ugh Iโ€˜m trying my best!!!! ๐Ÿซฃ So I think that the problem Iโ€˜m seeing is probably also a result of that. But did I also maybe underbaked it??? Or is it even OVERfermented now?

And over all – what do you think?
