For when you NEED pasta stodge 😋 highly recommend Rick Stein's Carbonara.
Only 550cals for a decent portion, really filling – even for my husband, super quick to make and the kids love it.
Serves 4:
400g spaghetti
3 eggs, beaten
50g ground pecorino
3 cloves garlic (I use puree because I'm lazy)
155g lean smoked diced bacon/pancetta
Salt
Pepper
Boil spaghetti in salted water, fry garlic and lardons. Once spaghetti is cooked, drain then mix in most of the cheese, pepper to taste then add the beaten eggs stirring quickly. Add garlic/bacon combo, serve and sprinkle on last of the cheese. Omnomnom.
