I don’t have time for complicated recipes and I know you don’t either.

This 10-minute meal is packed with flavor, fiber, and real food.

🔥RECIPE: 425 calories, 25g protein

1 cup black beans
1/2 c rice
1/2 c corn
1 cup veggie blend no oil
favorite salsa no oil
2 tbsp vegan cashew (I use credo cashew) you can also make mine – google full on plants cheese sauce

Heat everything together and top with cheese

  1. Just curious…..I'm trying to go back to full vegan after a six month trek into vegetarian. What are your thoughts on oxalate content of foods? Many plants and legumes are high in oxalates and considered tricky to eat regularly.
