I was in the mood to make some chipotle style hot sauce and I had a bunch of habaneros and a few jalapenos that needed to be used. The results have been other-worldly. A slightly sweet chipotle forward with a habanero kick on the back end.

What I did:

  • A dozen or so habaneros
  • A few other jalapenos/chiles I had available to me
  • 1 cup pineapple juice
  • 1 cup vinegar
  • 1/2 cup water
  • 3 San Marzano tomatoes
  • 2 white onions
  • 12 cloves of garlic
  • 3 tbsp brown sugar
  • 1 tbsp oregano
  • 1 tbsp paprika
  • 2 tbsp soy sauce
  • 1 tbsp MSG
  • 1 tbsp salt
  • 3 tbsp adobo sauce from canned chipotles

The seasoning quantities may not be exact as I didn't explicitly measure everything out.

I smoked the peppers at 200 degrees for 90 minutes.

Roasted the tomatoes, onions, and garlic on a cast iron skillet with a touch of oil.

Blended smooth.

Simmered on low on the stove for ~20 minutes, stirring constantly.

I'm blown away by the flavor. It's not a superhot hot sauce, but there is a habanero kick for those that like the spice. Words cannot describe the bliss I feel eating this.
