Chuck is a cut with a lot of potential, but until around 20 years ago, it was all lumped into the “stewing” category.
The reality is, there’s a lot of muscles in the chuck that could make great steaks. IMO – Flatiron is currently my favorite fast frying thinner cut of steak, and it comes from the chuck. Flat iron has the beefiness of round with the tenderness of tenderloin.

I see my beloved Thermapen in the background. One of my best investments. With Over half my food budget going to meats, I want to get it Right!! Nothing like a juicy steak, beef or pork steak on the charcoal grill! Or a “low and slow” smoked butt or turkey, a High-Roasted roasted chicken over thinned sliced potatoes and onion, or smoked ribs. Excuse me. I’ve made myself hungry, so, going to the kitchen to make me a bologna sandwich!! Lol
