LOADED LUNCHES, ep. 3: TZATZIKI CHICKPEA CHICKEN SALAD. I took my tzatziki recipe and used it as the sauce for this delicious Greek inspired chicken salad, giving you a protein packed, fiber rich lunch that you can enjoy any way you like! I love it stuffed in a pita, but it’s also great on lettuce leaves or on its own. Oh, and it’s mayo-free bc I don’t like mayo and I can’t serve you anything I don’t eat myself 🙃

Makes 4 servings
2 1/2 cups rotisserie chicken, shredded and chopped
1 15 oz can chickpeas, drained, and rinsed
2/3 cup kalamata olives
1/2 red onion, thinly sliced
2 persian cucumbers, finely chopped

Tzatziki Sauce
1 cup greek yogurt
3 cloves garlic, mashed
1 lemon, juiced
3 tb dill, chopped
1/3 cup mint, chopped
1/2 tsp kosher salt

Chop chicken into small pieces and add to a large bowl with all of the salad ingredients above. Prepare the tzatziki sauce—add all the ingredients to a bowl and mix until Incorporated. Pour the sauce over the chicken salad and toss. Enjoy! Store leftovers in a covered container for up to five days. #mealprep
