Garnishing in the pass without gloves on is a big no from me.

We had a chef who would give you the exact same stink-eye if you even put your hand on the plate before he was done garnishing. Chill guy, if you don’t mess with his dishes

In the kitchens i worked in. Servers did not touch the food till they are told to.
Otherwise you end up with people running stuff to the wrong table just because they ordered the same thing messing up the timing of whole pickups.

not taking sides here, but as a server you should know it gets garnished, and you should know that the garnish is applied when the plate hits the bar.
That pan needs some garnish too.
If it’s not ready. Shouldn’t be on the pass.

I always put a “touch line” in the window, if the plate is on the server side of line all yours, my side, touch and face my wrath.

I’ll admit, I often hit the bell before I garnish, with the assumption that it’ll take them a couple minutes to show up. Every once in a while I’ll do it not realizing they’re right around the corner and there will be a slightly awkward moment about it

I’m the sous at my place. At one point early on, our exec said that a dish without parsley is an “incomplete dish.” Now we all shout “INCOMPLETE DISH, INCOMPLETE DISH!” when servers grab the plate before it’s been hit.
Don’t put it in the pass til it’s done then.
Gives me flashbacks to running the pass. It was usually food sits for 15 minutes, or servers trying to sneakily steal other tables apps when I wasn’t looking.
