Hi friend. Welcome back to my kitchen. If YouTube brought you here, welcome. My name is Stacy and around here I create quick, easy, delicious, affordable meals. Well, today it’s going to be quick. It’s going to be easy. It’s going to be delicious and it will be affordable because it’s going to be made with a bunch of random half empty containers and cartons of noodles and broth and some veggies that are almost past their prime. But we’re going to save the day. We’re going to use all of these ingredients and create a delicious pasta prima vera. So, what do you say? Let’s get to it. We are going to make that delicious pasta prima vera with just a few things out of the fridge. I have some asparagus, a zucchini, some parmesan cheese. I have two chicken breasts that I’ve cubed up, two garlic cloves, I have some chopped red pepper, chopped onion, and a few cherry tomatoes. Now that we have everything cut up and ready to go, let’s talk about seasoning. So, we are going to do a tablespoon of seasoning on our chicken and our vegetables. This is just my homemade Greek seasoning. It’s equal parts onion powder, garlic powder, basil, and oregano. So, you can use Italian seasoning blend if you have that. We’re going to use half of the tablespoon on the chicken, and we’ll leave the other to season the veggies. And then we’re going to do a little bit of olive oil on our chicken as well. We’ll just stir that to get that incorporated a little bit. Now to our chicken, we’re going to add two cloves of garlic. There we go. And now I’m going to add the chicken mixture and the onions and the peppers to a pan. And we’re just going to sauté that on the stove. Then after that’s sauteed, then we’re going to add our chicken broth and our noodles. Once our chicken broth and our noodles are added, we’re going to bring that to a boil and cook these for about 10 minutes until they’re al dente. And then after that, we’ll add the zucchini, the asparagus, the tomatoes, and we’ll finish with the parmesan cheese. After 11 minutes, actually, here’s what we have. We’re going to add the rest of our Greek seasoning, our tomatoes, our asparagus, and our zucchini. And we’re just going to cook this until our veggies are tender. Look at that colorful goodness. About maybe 3 or 4 minutes. 3 minutes later. Our veggies are steamed. Our pasta is cooked. We are ready to eat. I’ll see you at the cutting board. Here is our finished dish. One thing that I am going to do is I’m going to come in and just squeeze a wedge of lemon right over the top just to kind of brighten everything up. And then we add our cheese. So, I’m going to add in about half of our cheese. But you can see how bright and colorful it is. It smells yummy. Garlic and that Greek seasoning blend. [Music] Now we’re just going to finish with another sprinkling of the parmesan and dinner is served. This is full of flavor. Our chicken is tender and those veggies just hit the spot. If you have some veggies to use up in your fridge, this is a great way to use them. Well, I hope that this has inspired you.
