This is pressed and crumbled tofu fried with garlic. Added chopped aubergine that was done in the air fryer for 15 mins, cooked in the hob with chopped tomatoes, basil, oregano, balsamic vinegar and lots of olive oil! Lovely with pasta

  1. I do this all the time. Here’s my slightly crazy secret. Crumble and pan fry the tofu plain until it starts getting crispy, then add soy sauce(1 1/2 tbs for one block) and mix until well dispersed, let it cook a couple more minutes, then add cocoa powder (1/2 tbs per block) and Nutritional yeast (1 tbs) and whatever other spices (in this case, I’d do maybe 1/2 tsp each oregano and garlic powder and 1/4 tsp black pepper)

    It’s hard to describe but the soy sauce and cocoa powder give it much more depth. I tried this for the first time with tacos, and my partner went absolutely nuts for it.

    To be fair to me I don’t remember what meat texture is like, but “mince” dishes is one of the things I find tofu too dry for. I like lentils or finely chopped mushrooms. I’ve not really tried many branded meat alternatives so if anyone knows a brand (available in the UK?) that isn’t dry, do let me know

    I didn’t have a airfryer so i used an oven, it wasn’t like the recipe so i overcooked it by 30 minutes, so mine was just dry af. Gotta eat that for a whole week btw.

  4. Yeah I don’t even bother buying the plant mince products any more, they give me indigestion too

    Just crumble up some tofu. I’ve started using two different types of tofu, one super firm and one fresh or firm. It helps to create the different textures.
