As a point of fact the only way to make jerk is by smoking, it’s not just a seasoning. authentic jerk is made using pimento wood slow smoked (indirect heat). For the maroon’s of Jamaica who originated jerk the nearly invisible smoke was essential for their survival as they hid in the mountains of Jamaica after escaping slavery.
