
I made maqluba (Levantine upside down rice) with soy curls, eggplants, potatoes, and tomatoes (tomatoes from my garden). I was pleasantly surprised it was devoured at the Midwestern US learning centre I brought it to. Don't be afraid to use traditional methods and recipes to cook vegan food!
