Ingredients:

500 g (1 lb) beef or calf liver, thinly sliced

2 large onions, thinly sliced into rings

1 cup milk (for soaking)

3 tbsp flour (for dredging)

½ tsp salt

½ tsp black pepper

½ tsp paprika (optional, for extra flavor)

3 tbsp butter (or half butter, half olive oil)

1 tbsp fresh parsley, chopped (for garnish)

Instructions:

Soak the liver: Place sliced liver in a bowl, cover with milk, and refrigerate for 30–60 minutes. This removes bitterness and makes it tender.

Prepare onions: In a skillet, melt 1 tbsp butter, add onions, and cook slowly until golden brown and caramelized. Remove and set aside.

Season & coat: Pat liver dry, season with salt, pepper, paprika, and lightly dredge in flour.

Cook the liver: In the same pan, melt remaining butter. Cook liver slices for 2–3 minutes per side until browned but still soft inside (do not overcook).

Combine: Add caramelized onions back on top of the liver. Let them heat together for 1 minute.

Serve: Garnish with parsley and serve hot with mashed potatoes, rice, or crusty bread.

Result: Juicy, tender, melt-in-your-mouth liver with sweet onions—just like Grandma used to make!
