
I picked up a Weber kettle grill a couple months ago but hadn't attempted wings until last week. These were smoked with charcoal and apple wood chunks using a vortex. I "dry brined" them with a mix of seasonings but since I hadn't really planned this ahead they probably only had 30 minutes. The sauce was pretty straight forward with Franks, butter, and a little white vinegar.
These were good enough I kind of forgot to take pictures until the last one. They were crispy, smoky, and tangy. On the negative side, I probably let them go a little too long as they were slightly dry. Next time I'll either use a little less time or just close the top vent a little.
